Beyond Flavour: Wine Tasting by Structure is Nick Jackson MW’s book on wine tasting. The first edition was released in 2020 to widespread acclaim, and the second edition was published in September 2022.

Beyond Flavor describes a different approach to wine tasting than the one usually taught in wine education. Rather than focusing on the flavours of a wine as the primary means of identifying the origin and grape variety of which the wine is composed, Beyond Flavour advocates an approach based on assessing a wine’s structure. For white wines, that means acid structure, and for red wines, tannin structure. Nick argues that each major variety has a slightly different structure, and by assessing the structure, it is possible to distinguish varieties from one another without recourse to flavours, which can be inconsistent and unreliable markers.

The Second Edition

What’s new in the second edition? First, a few facts and figures:

  • Available in hardback for the first time, along with paperback and Kindle editions
  • The second edition has 33% more words and 47 more pages (and the book is bigger - 6 x 9 inches as opposed to 5 x 8 inches)

New content:

  • Producer recommendations for each variety and major region of origin
  • A ‘confusions’ section in each variety entry, detailing how to distinguish between similar tasting varieties
  • Every variety entry has been re-organised, and now begins with a clear statement of the variety’s structure
  • All the regional style discussions now immediately follow each relevant variety, reducing the need to flip between sections
  • Three new variety entries (Verdejo, Tannat, Saperavi)
  • Each variety entry has an illustration. There are some duplicate illustrations due to similar structure profiles, but every entry now has an accompanying illustration
  • A table of structure, summarising each variety’s structure (available for download below)
  • A table of indicative analytical values, summarising alcohol and sugar level in key sparkling, sweet and fortified wines (also available for download below)
  • Much of the content has been re-written, incorporating new insights, especially the new concept of ‘construction,’ which tries to move our understanding of varieties beyond simply structure and into a more holistic view of how wines work in the mouth
  • A glossary of wine terms used in the book

Shipping Information

Collection & Shipping

Orders placed before 10 AM ET are generally processed and shipped the following business day. Please allow up to 48 hours for order processing. 

For special shipping requests, i.e. rush orders, international shipping, shipment of original wood cases, etc., please call (212)894-1990. 

All purchases, including shipping, tax, and any additional charges must be paid for in full prior to delivery.  Our acknowledgment of an order is not a guarantee that we will ultimately be able to ship wine to you. If we are unable to ship wine to the state you request, we will notify you.

In-Store Pick-Up
Clients may collect wines from our retail store. Please select “In Store Pickup” at checkout.

Orders will generally be available for pick-up the following business day, but processing may take up to 48 hours. Please specify date of collection at checkout.

Orders must be collected within 48 hours of specified collection date with no exceptions, after which time the wines will be transferred to our warehouse and we reserve the right to assess a $50 transfer fee, or cancel the order at our discretion.

For purchases under $175, there is a $35 van delivery fee per delivery address. 

Sotheby's Wine offers Free Ground Shipping via FedEx or UPS at our discretion for all orders over $175. Please allow up 1-7 business days for delivery*. 

Other FedEx or UPS services are also available for all orders. Shipping rates will be provided at checkout.

For same day delivery, please contact our store at (212-894-1990). Courier service may be available for same-day, depending on availability of bottles and at a shipping fee of $100 for the first case, and $10 per additional case.

Interstate shipping
Sotheby's Wine may ship to states that allow direct retailer shipments and where Sotheby’s Wine has appropriate licenses and/or permits. We currently ship to California, Connecticut, District of Columbia, Florida, Nebraska, New Hampshire, Oregon and Wyoming (Permit States) and may be expanding the number of states in the future. By requesting that your purchase be shipped to one of these states, you authorize Sotheby's Wine to engage a common carrier to deliver your wine on your behalf. Most have restrictions on the amount of wine that can be shipped, while some states prohibit alcohol shipments altogether. If your state does not allow direct retailer shipments, we will be unable to ship your purchase (see the “Title and Ownership” section below). Limitations on the amounts we may ship into Permit States are noted below:

  • Connecticut (Permit #: LOR.0000025)
    Sotheby's Wine has a permit to ship up to five gallons (or about 25 bottles) of wine per person per every two months, and we collect applicable sales tax.  Please note that we may not be able to ship some brands to Connecticut.
  • Nebraska
    Sotheby's Wine has a license to ship up to 9 liters of wine per client per address per month.
  • New Hampshire
    Sotheby's Wine has a permit to ship up to sixty bottles of wine per client address per year, and we are obliged to collect an 8% fee on all wine purchases shipped into the state of New Hampshire.
  • Oregon
    Sotheby's Wine has a license to ship up to two 9-liter cases of wine per resident per month.
  • Wyoming
    Sotheby's Wine has a license to ship up to 108 liters per household within any (12) month period. and we are obliged to collect a 12% fee on all wine purchases shipped into the state of Wyoming.

Estimated shipping rates are provided at checkout based on shipping address, shipping method, number of bottles/cases and their respective weights. We will send you an order confirmation which includes actual shipping charges and shipment tracking number.  All orders for delivery outside of Manhattan will be repacked in shipping containers to protect your wines while in transit.  Our shipping rates include the cost of packing materials.

International Orders
We do not currently offer international shipping due to international laws and restrictions.

Unfavorable Weather Conditions
Shipping fine and rare wine requires special care. Shipping during periods of extreme heat or cold can damage wine.  We encourage you to select FedEx Overnight or FedEx 2Day as your shipping method during the winter or summer months, in order to reduce the likelihood of weather-related damage to your wine. In winter and summer we generally do not ship Thursdays or Fridays, unless Thursday orders for overnight service, since carriers hold shipments over the weekends in their warehouses, where storage conditions may not be ideal.  During periods of extreme heat or cold, we will contact you with the following options for processing orders over $1,000.00:

  • Upgrade to FedEx overnight service at an additional cost.
  • Waive any liability against loss or damage by signing a form. (If you choose to ship during extreme weather conditions you assume all responsibility for possible weather-related damage)
  • Temporarily hold your wines in our temperature-controlled warehouse for up to 180 days at no additional charge.

Original Wooden Cases (owc)
If wines are packaged in original wooden cases and purchased in case quantities, the owc will be available for shipping via FedEx at the buyer’s expense. There will be no extra charge for the owc, but shipping costs vary according to shipping method, weight, and destination. For van delivery, store pickup, or courier orders, if the bottles are packaged in owc and purchased in case quantities, they will remain in owc for delivery or pickup. 

Title and Ownership
Title to and ownership of all wine will pass from Sotheby’s Wine to you in New York upon full payment of the purchase price, except for wine that is delivered to a Permit State.  For wine delivered to a Permit State, title to and ownership of such wine will pass from Sotheby’s Wine to you in that Permit State upon full payment of the purchase price. If delivering to a non-Permit State, you take all responsibility for the alcohol being transported from New York to your selected destination. After placing an order, you may make independent delivery arrangements, for which Sotheby's Wine may make some suggestions. New York sales tax will be applied based on the location in which title to and ownership of alcoholic beverages transfers. Sotheby's Wine makes no representation as to the legal rights of anyone to deliver or import any alcoholic beverages or other goods into any state.   

Title to and ownership of all spirits will pass from Sotheby’s Wine to you in New York upon full payment of the purchase price. 

Storage Election
If a purchased item remains uncollected after 90 days, we may send it to our long-term storage section at our wine warehouse, upon which time applicable state and local sales tax will be charged. You hereby agree to the Virtual Cellar Terms of Use, Storage Terms of Use and Auto-Renewal Policy with regard to the storage of such item, which can be found at https://www.sothebyswine.com/ny/storage.

Sales Tax
New York, California, Connecticut, District of Columbia, Florida, Nebraska, and Wyoming sales tax is charged on all purchases picked up in New York or delivered to New York or a Permit State, regardless of the state or country in which the purchaser resides or does business, unless Sotheby's Wine has been given, in advance of the release of the property, a valid exemption from taxes by the State of New York.

Property Management Fee
A Property Management fee is charged at a rate of 1.5% of the purchase price for all domestic shipments and covers any loss due to breakage or theft that may occur while your order is in the possession of a common carrier. It does not cover damage resulting from extreme hot or cold temperatures during transit.

If you opt to decline coverage this releases Sotheby's Wine of all liability associated with breakage or loss that may occur to your order during shipment.

If you have opted for property management coverage and you receive purchased property that has been broken during transit, you must notify Sotheby's Wine immediately.  In the event of non-arrival, you must inform Sotheby's Wine in writing within three days of expected delivery so that we may process your claim.

Legal age requirement
Wines and other alcoholic beverages may be sold and delivered only to persons over the age of 21. By ordering from this website, you affirm that you are at least 21 years old.  All first-time purchasers will be asked to provide a copy of a valid form of identification to be faxed or emailed to us for our records.  All alcoholic beverages that we ship on your behalf must be received and signed for by an adult 21 years old. If the wine is returned to us for failure to provide positive proof of age, the client is responsible for paying all related shipping charges.
