Collection: Savart x Jérôme Prévost

A highly anticipated first-ever collaboration between two of Champagne’s most sought-after grower-producers, Frédéric Savart and Jérôme Prévost of La Closerie (worked with Anselme Selosse for many years prior to starting his domaine), Éphémère 031 brings together two of the region’s most distinctive winemaking philosophies in a single, exceptionally limited cuvée.

Crafted entirely from Grand Cru Chardonnay sourced from the chalk-rich terroir of Avize, this 2016 was disgorged in March 2026 after nearly nine years on lees and finished with just 1g/L dosage. The result is an Extra-Brut Champagne of remarkable precision, depth, and tension.

Vibrant citrus, white peach, and delicate brioche lead into a striking chalky minerality and saline freshness. Powerful yet finely etched, it combines energy, purity, and exceptional length.
