Ouillé | Non-Oxidative

  • Beaumont | Chardonnay – from a 65-year-old plot of grey marl formerly made in Château Chalon’s traditional oxidative style, this chardonnay brims with notes of flint and just-ripe orchard fruit.
  • La Chaux | Chardonnay – from 65-year-old vines in Château Chalon, La Chaux is a complex and savory white with exotic notes of fleshy pineapple, hazelnuts, and a lengthy saline finish.
  • Croix Sarrant | Chardonnay – a full yet bright, non-oxidative chardonnay from the Jura, aged 18 months in barrel.
  • Aligato | Aligoté – sourced from Bouzeron and aged in Burgundian barrels on fine lees, this singular aligoté shows an exotic medley of sweet aromas balanced with an herbal, almost agave-like smokiness.
  • Cuvée 909 | Pinot Noir – this homage to the year Jurassic monks first left the region to settle in Burgundy shows a heady bouquet, both floral and earthy, with over-ripe berry fruit and fine tannins.
  • Voyage au Bout de Nuits | Pinot Noir – sourced from Nuit-Saint-Georges, ‘Voyage au Bout de Nuits’ or ‘Journey to the End of Nights’ offers brambly black fruit and an earthy, meaty underbelly, one enlivened by the vibrancy and brightness of juicy Jura reds.

 

Sous Voile | Oxidative

  • Puits St. Pierre | Savagnin – ‘Puits Saint Pierre’, or ‘Saint Pierre’s Well”, is made from 80-year-old Savagnin grown in gray marl soils in Château-Chalon. Texturally a bit creamy, this is a citrusy, stony white with a welcome touch of tartness.
  • Mémé Marie | Chardonnay & Savaginin – named after his grandmother Marie, this blend of youthful, floral Chardonnay contains just a splash of exotic sous-voile Savagnin – a great segue into the wild world of Jura aromatics.
  • Balanoz | Savagnin – aged sous voile or under flor for 4 years in an oxidative style, this rich and powerful Savagnin is masterfully balanced, with ripe orchard fruit, exotic spice, and a touch of roasted nuts.

 

Macvan du Jura | Fortified

  • Vieux Macvin | Chardonnay & Savagnin – produced only in top years, the Vieux Macvin is made by blending unfermented Chardonnay or Savagnin with brandy, and aging in barrel for five years. This iconic specialty of the Jura works wonderfully as an aperitif or a digestif – offering wild aromatics of dried fruit, spices, and candied citrus zest.
