Chevillon farms eight Premier Cru climats alongside carefully tended village parcels, each cuvée offering a distinct view of Nuits-Saint-Georges. Among the most sought-after are Les Cailles, Les Saint-Georges, and Les Vaucrains, where vines approaching a century in age yield Pinot Noir of impressive concentration and clarity. The 1996 Les Saint Georges is a striking example, its maturity revealing the complexity and remarkable aging potential that have long distinguished Chevillon’s wines.
