Domaine Hubert Lignier is the master of Morey St. Denis, making compelling wines for decades. Best known for their great Clos de la Roche, the wines are exemplary at all levels. The style is typical Morey: feet in the earth, head in the sky. That means the wines are typically structured and dry, but with air, open up to give remarkably high-toned, complex aromas and flavours of great precision and purity.
The Bourgogne Rouge or the Morey village wine, Triologie, are great places to start. The Morey Premiers Crus usually benefit from a few years of age, but then improve for up to 15 years. And if you can afford them, the Grands Crus, especially Clos de la Roche, are simply among the region's finest wines.
